A slow, simple brew
Hot brew
One bag per 240 ml
One bag or one heaped teaspoon of loose blendper cup.
Fresh boiled water
Just off the boil, around 95°C. Let it settle amoment for floral blends.
Steep 3 to 5 minutes
Three for a lighter cup, five for something fuller.Then lift the leaves out.
Iced brew
Two bags, double strength
Use two bags per 240 ml so the ice does not waterit down.
Steep, then cool
Brew 5 minutes in hot water, then let it rest beforethe next step.
Pour over ice
Fill a glass with ice and pour. Add lemon to watchblue turn purple.

Blue Lemon Cooler
A colour-shifting iced tea that turns from blue to purple as you pour.

- Brew 2 blue tea bags in 240 ml hot water for 5 minutes.
- Cool, then pour over a glass of ice.
- Squeeze in fresh lemon and watch it turn purple.
Hibiscus Spritz
A bright, tart cooler that feels like a celebration in a glass.

- Brew hibiscus strong and chill until cold.
- Half fill a glass with the tea over ice.
- Top with soda water and a slice of orange.
Chamomile Honey Iced
A gentle, lightly sweet iced tea for a slow afternoon.

- Brew chamomile 3 minutes and stir in a little honey.
- Let it cool, then pour over ice.
- Finish with a sprig of fresh mint.
Do, and do not
Do
- Use fresh, just boiled water. It draws out the most flavour and aroma.
- Steep by the clock. 3 to 5 minutes is the sweet spot for most blends.
- Sweeten gently. A little honey or jaggery suits herbal blends beautifully.
- Store in a cool, dry place. Keep the pack sealed and away from sunlight.
Do not
- Do not use water off a rolling boil for florals. Let it settle a few seconds first.
- Do not over steep. Too long can turn delicate blends bitter.
- Do not reuse leaves all day. One good brew gives the best cup.
- Do not store near spices. Tea easily picks up near by aromas.
