Known botanically as Clitoria ternatea, butterfly pea has been part of South and South East Asian gardens for centuries. The deep blue petals have long been steeped into a calming, caffeine free drink and used to add natural colour to food.

What it brings to your cup

The colour change, explained
Here is the part everyone loves. Add a squeeze of lemon and your blue cup turns soft purple, even pink. It is simple chemistry, the acidity shifts the anthocyanins, and it makes butterfly pea a delight to serve over ice.
How to brew it well
Use one teaspoon of flowers per 240 ml of fresh, just boiled water and steep for 3 to 5 minutes. For an iced version, brew it double strength, cool, then pour over ice and finish with lemon for the colour change.
